What is Kappo?
Kappo cuisine is a multi course meal that is usually left up to the chef, or also called “Omakase”. Directly translated, it means “cut and cook” and emphasizes the relationship between the chef and the guest.
About the chef.
Born and raised in Chicago, Chef Jordan’s journey from aspiring artist to acclaimed chef is a story of passion and transformation. Initially, Jordan turned to the world of kaiseki and sushi as a means to support his artistic ambitions, but what began as a practical pursuit soon became a profound love for the culinary arts.
Having collaborated with some of the world’s leading chefs, Jordan honed his skills and embraced the rich, diverse flavors of global cuisine. His experiences have culminated in the creation of Kappo by Tron, where he combines the meticulous techniques of Japanese fish preparation with the vibrant, seasonal produce of Chicago.
At Kappo by Tron, the objective is to create exceptional tasting menus that celebrate this unique fusion of influences, offering diners an extraordinary culinary experience that bridges cultures and flavors.
